Tasting Note
Opulent red-fruit core (plum, black cherry) with peony and exotic spice, vanilla from oak, silky yet racy tannins, mineral and forest-floor notes, bright acidity and a long, spicy finish.
Food Pairing
Western: roast duck, mushroom risotto, lamb chops, beef bourguignon. Asian: Peking duck, char siu, miso-glazed salmon, soy-braised short ribs.
Production Method
Hand-harvested Pinot Noir; 2019 vintage fermented with de-stemming (no stem addition that year), indigenous yeasts in vats, extended élevage in French oak (part new) for ~18–20 months, then bottled after settling.
