Tasting Note

Bright red and black cherry, wild raspberry, rose petal and forest floor, with baking spice, cocoa and fine iron-mineral undercurrent. Fresh acidity, firm fine-grained tannins and a long saline finish.

Western: roast duck, lamb, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu, miso-glazed black cod, shiitake & soy braised dishes.


Production Method

Hand-harvested, rigorous sorting; traditional Pinot Noir vinification with gentle extraction, élevage ~15–18 months in French oak (proportion new varies); minimal filtration/gravity bottling.
