Bright citrus, green apple and pear with white flowers, chalky/mineral core, pastry/vanillin oak and saline, long finish; vibrant acidity and concentrated texture.

Western: lobster with beurre blanc, seared scallops, roast chicken in cream sauce, aged Comté or Gruyère. Asian: miso‑glazed black cod, sushi/sashimi (fatty tuna/salmon), Cantonese steamed fish, mild coconut curries.


Production Method

Hand-harvested Chardonnay, gentle whole-cluster pressing, oak fermentation and élevage (malolactic often completed), 12–18 months in barrels with a high proportion of new oak for Grand Cru.
