Tasting Note

Pear, white flowers, pastry cream and citrus peel with chalky minerality and saline drive. Opulent yet precise, showing fresh acidity, baked-bread/toasty oak notes and a long, stony finish.

Western: roast chicken with herb butter, beurre blanc lobster, seared scallops, creamy pasta, Brie or aged Comté. Asian: miso-glazed black cod, steamed sea bass with ginger & soy, salmon nigiri, mild coconut curry, tempura vegetables.


Production Method

Hand-harvested grapes; whole-bunch pressing and cool settling; ferment and élevage in French oak (significant proportion new oak for Grand Cru) with indigenous yeasts; 15–18 months barrel ageing; minimal fining/filtration.
