Tasting Note

Perfumed red fruit (Morello cherry, raspberry), violet and spice, silky texture with minerality, lively acidity and a focused, saline finish. Approachable now but will gain complexity with age.

Hand-harvested, sorted; partial whole-berry cold soak; indigenous yeast fermentations with gentle extraction; aged 15–18 months in French oak (variable % new); minimal fining/filtration.
