Tasting Note

Perfumed and floral with violets, red cherry and raspberry, a mineral/iron backbone, light savory spice and silky, fine-grained tannins. Elegant mid-weight palate with a saline, lingering finish.

Food Pairing

Roast duck, coq au vin, mushroom risotto, beef bourguignon; western charcuterie and soft cheeses. Asian: Peking duck, soy/miso-glazed salmon, teriyaki chicken, mushroom hot pot, grilled shiitake and pork gyoza.

Production Method

Hand-harvested Pinot Noir; gentle cold soak, temperature-controlled fermentation (mostly destemmed), élevage 12–16 months in French oak (portion new), minimal filtration; made in a terroir-driven, low-intervention style.
