Tasting Note
Cool-climate Chardonnay: white peach, nectarine, green apple, hazelnut and subtle toasty/cashew oak. Crisp citrus acidity, mineral spine, creamy mid-palate and a long, flinty finish.
Food Pairing
Roast chicken with herbs, grilled/poached salmon, creamy pasta (carbonara), soft cheeses; Asian: seared scallops with soy-butter, prawn tempura, sushi (fatty tuna/salmon), mild miso-glazed fish.
Production Method
Cold-settled juice; primarily barrel-fermented in French oak with a portion in stainless steel. Matured on lees with partial malolactic fermentation; around 15% new French oak aging.
