Tasting Note

Vibrant straw-lemon colour; crisp apple and pear with fleshy peach and nectarine, wet-stone minerality, spicy cedar oak and nutty almond/marzipan notes. Balanced oak, bright acidity and a textured mid-palate.

Western: roast chicken with creamy sauce, chicken and camembert pie, grilled salmon, seared scallops. Asian: miso‑glazed cod, soy‑ginger prawns, creamy coconut Thai dishes, Cantonese roast pork (char siu).


Production Method

Hand‑picked Tumbarumba fruit; whole-bunch pressing; fermented and matured in French oak (≈9 months) with careful barrel selection and limited bâtonnage; blended and lightly filtered prior to bottling.
