Tasting Note
Bright red-berry core of cherry, raspberry and bramble with floral rose and potpourri notes, touches of dried thyme, tobacco and savoury umami. Fresh acidity, silky-to-chalky tannins and medium-length finish.
Food Pairing
Western: roast duck, mushroom risotto, lamb cutlets, pork belly. Asian: Peking duck, char siu pork, miso-glazed salmon, mushroom and soy stir-fries.
Production Method
Hand-picked parcels fermented in small open fermenters; mix of destemmed, whole-berry and some whole-bunch/carbonic parcels. Aged ~11 months in 25% new French oak.
