Tasting Note
Lemony citrus, nectarine and pear with honeysuckle, beeswax and roasted almond; mineral, textural and tight with balanced oak and refreshing acidity leading to a linear, persistent finish.

Food Pairing
Western: roast chicken, grilled salmon, lobster with beurre blanc, creamy pasta, aged comté or brie. Asian: miso-glazed black cod, sushi/sashimi, tempura prawns, Cantonese steamed fish, milder Thai curries, pork belly bao.

Production Method
Hand-harvested fruit; ~75% malolactic fermentation; fermented and matured ~11 months in a mix of new and seasoned French oak (puncheons, hogsheads, barrels) with regular lees stirring for texture
