Tasting Note
Off-dry, bright Riesling showing pear, green apple, quince, tangerine and white peach with saline minerality, subtle smoky/kerosene notes and herbal lift. Lively acidity, delicate honeyed texture and a crisp, stony finish.

Western: smoked salmon, grilled scallops, roast pork, creamy goat cheese, charcuterie. Asian: spicy Thai green curry, Sichuan pepper prawns, sushi/sashimi, Korean barbecue, lightly spiced Chinese pork or dim sum.
Production Method
Hand-harvested from old-vine slate/quartz soils; spontaneous fermentation with indigenous yeasts in large old oak 'fuder' barrels; slow cool fermentation to retain residual sugar (c.48–50 g/L); aged in large wooden casks; minimal sulfites; sustainable/organic practices.
