Tasting Note
Luminous, intensely sweet Riesling: apricot, ripe pear, pineapple, honey and candied citrus with rhubarb, subtle spice and maritime salinity. Silky, oily texture with bright, racy acidity and a long, saline-mineral finish.
Food Pairing
Foie gras, blue cheese, crème brûlée, fruit tarts, almond cake; spicy Thai or Szechuan dishes, hoisin-roasted duck, miso-glazed salmon, mango sticky rice, richer sushi (unagi) or dim sum with sweet sauces.
Production Method
Hand-harvested as frozen whole clusters (~-9 to -10°C) on Dec 5, 2016; pressed while frozen, fermented slowly to retain acidity; bottled March 2017. No botrytis; extremely high residual sugar.
