Tasting Note
Lusciously sweet, botrytis-driven honey, apricot, orange marmalade, dried stone fruit and candied citrus with spice and tight acidity balancing the sugar; viscous texture and a very long, golden finish.
Food Pairing
Foie gras, blue cheese (Sauternes-style pairings), fruit tarts, crème brûlée; Asian: honey-glazed roast duck, Thai green curry (mild), spicy Szechuan pork with balancing sweetness.
Production Method
Hand-harvested, noble-rot (Botrytis) grapes made as Trockenbeerenauslese; tiny yields, small-batch fermentation to low ABV and aging in traditional Mosel fuders (old oak).
