Tasting Note
Floral and white-peach nose with apple, pear and subtle smoke. Lively, zesty palate of citrus and slate minerality, fresh herb notes and a long, spicy, refined finish.

Western: grilled trout, roast chicken, pork schnitzel, goat cheese. Asian: sushi/sashimi, Thai green curry, Szechuan-spiced dishes, dim sum.

Production Method
Hand-harvested; ~3-hour skin maceration before pressing; temperature-controlled fermentation in traditional large Mosel fuder (old oak); bottled April 27, 2021.
