Tasting Note
Perfumed honey, candied peach and ripe melon with citrus peel, saline blue-slate minerality and spice. Intense botrytized sweetness is balanced by very high, racy acidity; mouthcoating texture and a very long, clean finish.
Food Pairing
Western: foie gras, blue cheese (Roquefort), roasted pork belly, roasted duck; Asian: Peking duck, spicy Thai green curry, soy-glazed salmon, sushi (otoro/uni), mango sticky rice.
Production Method
Hand-harvested, partially botrytized fruit (c.20–30%), picked at very high Oechsle, fermented in large traditional oak Fuder with indigenous yeasts and matured in wood to retain residual sugar and freshness.
