Tasting Note
Perfumed Nebbiolo: red cherry, raspberry, rose petal, dried herbs, tar and tobacco with mineral, chalky tannins and bright acidity; savory, long finish with cedar, spice and eucalyptus.
Food Pairing
Western: braised beef, osso buco, roast lamb, aged cheeses, mushroom risotto. Asian: Peking duck, char siu, beef hotpot or sukiyaki, shiitake mushroom stir-fry.
Production Method
Hand-harvested Nebbiolo; 10–12 day skin maceration; alcoholic fermentation in stainless steel; malolactic in French oak barriques; aged ~18 months in French oak barriques, then bottled after additional rest.
