Tasting Note

Perfumed Nebbiolo: rose, violet, red cherry and blood orange with hints of incense, graphite and dried herbs. Mid-weight, mineral-driven palate with polished, grainy tannins and a long savory finish.


Food Pairing

Western: roast beef, braised short ribs, lamb, game, truffles, aged Piedmontese cheeses. Asian: Peking duck, Korean bulgogi, char siu, soy-braised beef, mushroom- and truffle-forward noodle dishes.


Production Method

10–20 day maceration; fermentation in stainless steel; malolactic in barrel; aged 18–24 months in French oak (small barrels/barriques, ~10% new); rested in bottle before release.
