Tasting Note
Fragrant Nebbiolo: red cherry, wild strawberry, rose petal, orange peel, licorice and dried herbs; stony/mineral undertone, bright acidity, powdery fine tannins and a persistent, savory finish.

Western: braised beef, osso buco, porcini risotto, roasted lamb, aged Parmigiano-Reggiano. Asian: Peking duck, Korean bulgogi, char siu, miso-glazed aubergine, rich Szechuan or Cantonese roast pork (moderate spice).
Production Method
Hand-harvested Nebbiolo; stainless-steel fermentation with medium–long maceration; aged 18–24 months in large oak casks and some French oak barrels; bottled after light filtration.
