Tasting Note

Aromatic junmai daiginjo with delicate floral and white-fruit notes, fine umami on the palate, clean mineral backbone and a crisp, slightly saline finish. Elegant, refined and terroir-driven.

Sushi and sashimi, light grilled fish (salmon, sea bream), tempura, miso-glazed vegetables; Western: oysters, light goat cheese, poached chicken, seafood salads; Asian: chilled tofu with soy, sashimi, yakitori (lightly seasoned).


Production Method

Junmai Daiginjo (Yamada Nishiki rice polished ~50%), small-batch ginjo-style slow fermentation, careful koji cultivation and low-temperature fermentation using locally sourced underground water.
