Tasting Note
Silky, refined daiginjo: delicate musk and white-peach/muscat fruit, light orchard apple, and polished rice umami, finishing clean with gentle acidity and a long, elegant aftertaste.
Food Pairing
Western: seared scallops, ceviche, smoked salmon, light poultry or creamy pasta. Asian: sashimi/sushi, tempura, steamed white fish, light Chinese or Thai seafood dishes.
Production Method
Junmai Daiginjo using 100% Yamadanishiki (Tojo, Hyōgo); seimaibuai 30%; middle-cut (nakadori) selection; aged over one year in the brewery at low temperature before release.

Made by Matsuse Sake Brewery (Matsunotsukasa/Matsuse Shuzō), family-run since c.1860 in Ryūō, Shiga. Known for contract-farmed Yamada Nishiki and small-batch, terroir-focused brewing.
