Tasting Note
Dark cherry, plum and ripe blackberry with violet, spice and crushed graphite; silky texture, chalky tannins, bright acidity and a long savory, slightly saline finish.

Food Pairing
Western: roast lamb, grilled or braised beef, aged Manchego, cured sausages and stews. Asian: Peking duck, char siu, Korean BBQ short ribs, spicy Szechuan beef and rich mushroom stir-fries.

Production Method
Hand-harvested fruit; native-yeast fermentation in oak vats and stainless steel; matured 14–15 months in French oak barrels.
