Tasting Note
Blackberry, black cherry and plum compote with dried herbs, cigar and chalky mineral notes; medium-full body, fine-grained chewy tannins and a long, earthy-toffee finish.

Roast lamb, grilled beef, Iberian ham, duck confit, aged cheeses; Asian pairings: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan beef.

Production Method
Hand-harvested; fermented with indigenous yeasts in stainless-steel and oak vats; matured 14 months in French oak barrels.
