Tasting Note

Blackberry and ripe plum with tangy spices, graphite and cocoa; medium–full body, fine chalky tannins, bright acidity and a long, tangy mineral finish.

Western: roast lamb, grilled rib‑eye/steak, beef stew, aged Manchego or hard cheeses. Asian: Korean BBQ (bulgogi), char siu, Peking duck, spicy Sichuan beef or braised short ribs.


Production Method

Organic viticulture; hand-harvested; fermented with indigenous yeasts in oak vats and stainless steel; aged 14 months in French oak barrels; bottled July 2021.
