Tasting Note
Deep golden; intense aromas of candied apricot, peach, honey and warm spice. Syrupy, concentrated palate of apricot, fig, pineapple and caramel with bright balancing acidity and a very long, honeyed finish.
Food Pairing
Western: fruit tarts (apricot, peach), cantucci, crème brûlée, blue cheeses (Roquefort, Gorgonzola), pâté, dark chocolate. Asian: mango sticky rice, mooncakes, Chinese egg tarts, sesame-based desserts, coconut custards and sweet dim-sum pastries.
Production Method
Late-harvest (grapes often air-dried/hung; occasional botrytis). Slow fermentation and maturation about 24 months in barrique/tonneaux, followed by bottle ageing.
