Tasting Note
Concentrated dark cherry, pomegranate and blackberry with tobacco, dried herbs, cracked pepper and mineral/soil notes. Full-bodied, firm chalky tannins and long savory finish.

Western: grilled/roast lamb, bistecca alla Fiorentina, braised beef, aged Pecorino/Parmesan. Asian: Peking duck, char siu, Korean BBQ (galbi), soy-braised short ribs, mushroom and miso-based dishes.

Production Method
Hand-harvested Sangiovese, traditional fermentation with extended maceration; matured ~36 months in large oak casks (Allier/large botti), then bottled and rested before release.
