Tasting Note
Bright citrus and white-flower aromatics with pear, white peach and wet-stone minerality; saline, lemon peel and subtle honeyed notes. Light-to-medium bodied, crisp acidity and a refreshing, slightly savory finish.
Food Pairing
Western: oysters, grilled white fish, fritto misto, roasted chicken, citrus salads, fresh burrata. Asian: sushi/sashimi, tempura, grilled scallops, Thai lime-and-herb salads, Vietnamese spring rolls.
Production Method
Each variety harvested and fermented separately in stainless steel and used French oak, matured ~6 months (used oak + steel), then blended ~6 weeks prior to bottling. Early picking to emphasize freshness.
