Tasting Note
Deep ruby. Aromas of black cherry, plum, violet, cocoa, leather and tobacco. Full-bodied, dense dark-fruit core with firm, fine-grained tannins, spice and dark chocolate notes; long, savory finish.

Food Pairing
Grilled lamb, braised beef, ragu pasta, aged Pecorino or Parmigiano; Asian: Korean BBQ (bulgogi), char siu/Chinese roasted pork, Sichuan-style beef or hoisin-glazed duck.

Production Method
Hand-harvested Montepulciano; fermented in stainless steel with 15–20 day fermentation and 20–30 day maceration; aged 12–18 months in new French oak barriques, followed by bottle aging.
