Tasting Note
Golden-amber; aromas of acacia honey, linden blossom and candied fruit. Palate shows fruit jelly, apricot, vanilla and warm spice, finishing long with honeyed nuts and cedarwood.

Foie gras, roasted duck or game, aged cheeses, dark chocolate; Peking duck, char siu, red-braised pork, miso-glazed fish, and rich Sichuan or Cantonese dishes.
Production Method
Eaux-de-vie from the Borderies cru (Ugni Blanc) double-distilled in Charentais alembics, aged in French oak casks and skillfully blended by the Martell cellar master; XXO uses very old reserves (>80 years for some lots).
