Tasting Note
Deep amber with golden highlights. Aromas of violet, apricot, candied lemon, plum and honey; cinnamon, nutmeg and vanilla. Palate offers ripe peach, fig and gentle oak; long, elegant, floral-honeyed finish.
Food Pairing
Western: foie gras, roasted duck, pâté, dark chocolate, mature cheeses. Asian: Peking duck, char siu, soy-braised pork belly (hong shao rou), Cantonese roast pork, mooncakes, spiced dim sum.
Production Method
Double distillation in traditional Charentais copper pot stills; eaux-de-vie from a single Borderies estate aged in fine-grained French oak barrels and matured by Martell cellar masters.
