Tasting Note
Deep purple with blackcurrant, blackberry, violet, liquorice, mocha and cedar. Silky, dense palate with ripe fruit, polished firm tannins and a long, peppery finish.

Western: roast lamb, ribeye steak, mushroom risotto, aged Gouda, beef short ribs. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ (galbi), miso-glazed eggplant, braised beef with soy and star anise.
Production Method
Parcel vinification in concrete, wood and stainless tanks; cold pre-fermentation maceration, natural yeasts, gravity filling, minimal intervention; aged 16 months in French oak (≈50% new).
