Tasting Note
Deep dark red with cherry, cassis, cedar, blackberry and black tar. Complex and concentrated, with firm yet silky tannins, fresh acidity and a long, savory finish.

Western: grilled steak, roast lamb, game, braised beef, aged hard cheeses. Asian: Korean BBQ, Chinese red-braised (hong shao) pork, Sichuan beef dishes, Japanese teriyaki or yakitori with glazed beef.
Production Method
Clusters destemmed and gravity-fed; 8-day alcoholic fermentation in closed stainless tanks with pump-overs; ~10 days skin contact; spontaneous malolactic; 16 months in French oak (30% new, 70% second-use).
