Tasting Note
Crème de cassis, blackberry and violet with pencil‑lead, sandalwood and cocoa. Silky yet structured palate, ripe/firm tannins, mineral backbone and a very long, perfumed finish.

Food Pairing
Western: roast lamb, beef tenderloin, mushroom risotto, aged comté or cheddar. Asian: Peking duck, Cantonese roast pork (char siu), red‑braised beef, shiitake and soy braised dishes.

Production Method
Hand‑harvested, traditional vinification in oak vats, malolactic fermentation; élevage ~18–24 months in 100% new oak barrels.
