Tasting Note
Opaque ruby; black cherry, cassis, violets, graphite, tobacco and licorice with sweet smoky oak. Powerful, elegant mid-palate, firm chewy tannins and a long, mineral-driven finish.

Food Pairing
Western: roasted lamb, prime rib, venison, beef Wellington, aged cheddar. Asian: Peking duck, Korean BBQ (bulgogi), char siu, beef rendang, soy-braised short ribs.

Production Method
Traditional Bordeaux vinification: hand-harvested, destemmed, fermentations in temperature-controlled vats, extended élevage in French oak (significant new oak), bottled late (Nov 1997).
