Tasting Note

Perfumed blackcurrant and violet with cedar, graphite and truffle notes; dense dark fruit, silky polished tannins, bright acidity and an exceptionally long, mineral finish.

Western: roast lamb, beef Wellington, venison, truffle risotto, aged hard cheeses. Asian: Peking/Cantonese roast duck, Korean barbecue (bulgogi/galbi), miso‑glazed dishes, rich umami stews and beef rendang.


Production Method

Hand‑harvested and rigorously sorted; destemmed and fermented in stainless steel and wood vats with controlled maceration; malolactic fermentation; aged ~18–24 months in French oak (high proportion new) before blending and bottling.
