Tasting Note

Silky, elegant Pinot Noir: red and black cherries, raspberry and blackberry with licorice, spice and subtle earth. Silky, ripe tannins and a long, mineral-tinged finish (balanced, refined Premier Cru).

Western: roast beef, braised short ribs, lamb rack, mushroom risotto, aged cheeses (Époisses, Roquefort). Asian: Peking duck, char siu / braised pork belly, beef rendang, shiitake & soy braised dishes, grilled teriyaki mushrooms.


Production Method

Hand-harvested Pinot Noir; cold pre-fermentation maceration (~8 days), indigenous yeasts, ~20-day fermentation; aged ~16 months in French oak (portion new oak).
