Tasting Note
Bright citrus and green apple with pear and white peach, honeyed brioche and faint petrol note, saline minerality and lively acidity; creamy mid-palate and a long, focused, slightly toasty finish.
Food Pairing
Western: roast chicken, lobster with beurre blanc, creamy pasta, mushroom risotto. Asian: miso black cod, sushi (fatty tuna), tempura prawns, steamed dim-sum and soy-glazed scallops.
Production Method
Hand-harvested Chardonnay fermented and aged in French oak barrels (reduced new-oak use in 2020), élevage in 228L barrels with bâtonnage and careful lees contact for 12–18 months.
