Tasting Note

Pear, white peach and citrus confit with white flowers, beeswax and toasted almond. Satiny, concentrated mid-palate with saline minerality, lively acidity and a long, layered, slightly gourmand finish.


Food Pairing

Western: roasted lobster, seared scallops, grilled salmon, roast chicken with beurre blanc, creamy pasta. Asian: miso‑glazed cod, sushi (fatty tuna/salmon), tempura, chicken katsu, mild coconut fish curry.


Production Method

Hand-harvested fruit; cool pressing, barrel fermentation and élevage in French oak (≈30% new); moderate bâtonnage and malolactic fermentation typical of the domaine.
