Tasting Note

Black and blue fruits (blackberry, plum, blueberry) with lilac, cedar, graphite and spicy notes; full-bodied, ripe yet precise, firm rounded tannins, mineral lift and a long, refreshing finish.

Western: roast lamb, braised beef, duck confit, aged cheddar and mushroom risotto. Asian: Peking duck, char siu, Korean BBQ (beef bulgogi), soy-braised short ribs, mushroom hot pot.


Production Method

Hand-harvested and parcel-sorted; cold pre-fermentation maceration; gentle temperature-controlled stainless-steel fermentations; aged 13–15 months in French oak barrels (≈40% new); bottled at the château.
