Western: roast lamb, grilled beef, venison, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, braised beef with soy, mushroom hot pot.
Production Method
Hand‑harvested; temperature‑controlled fermentation; aged 12–14 months in French oak barrels (majority new); bâtonnage on lees; bottled unfined and unfiltered.
