Tasting Note
Dark blackberry, black cherry and plum with cedar, tobacco leaf, violet and clove spice. Medium–full-bodied with fine-grained firm tannins, saline-mineral backbone and a long anise-tinged finish. Elegant, concentrated and ageworthy.
Food Pairing
Western: roast beef, lamb, venison, mushroom risotto, aged cheddar or Comté. Asian: Peking duck, char siu, Korean bulgogi, Sichuan braised beef, miso-glazed aubergine.
Production Method
Parcel vinification in small temperature‑controlled vats; hand-harvested, strict selection. Aged ~18 months in French oak (≈65% new); light filtration before bottling.
