Tasting Note
Vibrant dark ruby with fine bead. Ripe plum, raspberry, red currant and blackberry, with vanilla, spice and subtle bready/yeasty notes. Smooth, balanced and rich with gentle tannins and a generous finish.

Food Pairing
Bacon & eggs, cured meats, BBQ ribeye, roasted lamb, venison; spicy dishes: beef chilli, Thai red curry, Sichuan-style spicy stir-fry, Korean BBQ; cheese boards (hard cheeses) and charcuterie.

Production Method
Base wine matured 5 months in 2nd/3rd-use French oak hogsheads; secondary fermentation in bottle (méthode traditionnelle); 14 months on lees; hand-riddled, disgorged; small addition of vintage-port liqueur.
