Tasting Note
Vibrant dark ruby with bright bead. Aromas of black cherry, plum, raspberry and blackberry, with spice, vanilla oak and yeasty brioche. Juicy, lively mousse, gentle tannins and a dry, generous finish.

Food Pairing
Western: roast beef, lamb, game, bacon & eggs, mature/hard cheeses. Asian: char siu, Peking duck, Korean BBQ, spicy Sichuan dishes, teriyaki pork, yakitori.

Production Method
Base wine matured 5 months in 2nd/3rd-fill French oak hogsheads; secondary fermentation in bottle (méthode traditionnelle), 12–14 months on lees; hand-riddled, disgorged with a small vintage-port liqueur dosage.
