Tasting Note
Dark magenta colour. Aromas of mulberry, blackcurrant, blackberry and vanillin oak. Palate of cassis, plums, spice and mint, with mouth-filling Shiraz softness and poised Cabernet structure. Fine, integrated tannins and long finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef stew, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese roasted duck, Sichuan beef stir-fry, char siu pork.
Production Method
Individual parcels fermented in small static fermenters ~5 days, finished and matured in new French oak for ~18 months; barrels selected for blending.
