Tasting Note
Concentrated blackcurrant, blackberry and plum with dark chocolate, black olive, vanillin oak and spice; mint lift. Full-bodied, ripe fruit softened by Shiraz, framed by fine structured Cabernet tannins and a long savoury finish.

Grilled/roast beef, lamb or venison; aged cheddar or hard cows' cheeses; Western braised beef dishes. Asian: Korean BBQ short ribs, char siu, spicy Sichuan beef, beef rendang, teriyaki beef skewers.
Production Method
Small-batch fermentations in static fermenters; finished and aged in new French oak barrels for ~18 months; selected barrels blended for final bottling.
