Tasting Note

Dense blackcurrant, mulberry and plum with cedar, vanilla oak, mint and savoury/meaty notes. Silky Shiraz texture with structured Cabernet grip and a long, cedar-tinged finish.

Roast lamb, grilled ribeye, slow-cooked beef brisket; aged hard cheeses; Asian: Korean BBQ (galbi), char siu, Sichuan beef, lamb curry (Indian).


Production Method

Small-batch static fermentation; finished and matured about 16–18 months in new and seasoned French oak hogsheads; barrel-selected and blended.
