Tasting Note

Dark magenta with concentrated blackcurrant, plum and mulberry, bright eucalyptus/mint lift, cedar, vanilla and subtle tobacco; fine dusty tannins and long, polished finish.

Grilled ribeye, roast lamb, beef stew; aged cheddar or gouda; Asian: Korean BBQ (bulgogi or galbi), char siu pork, Szechuan beef or hoisin-glazed duck.


Production Method

Fermented in static and rotary stainless steel, finished in 300L barrels; matured 18 months in new and second-use French oak hogsheads; parcels kept separate prior to blending and bottling off-site.
