Tasting Note

Bright red cherry and raspberry with black-fruit depth, floral violet notes, subtle spice and mineral grip. Plush mid-palate with silky tannins and a fresh, savory finish.

Western: roast chicken, lamb, mushroom risotto, charcuterie, aged cheeses. Asian: Korean BBQ (galbi), char siu, teriyaki chicken, ramen, grilled shiitake and soy‑glazed dishes.


Production Method

Hand‑harvested Gamay; traditional Beaujolais vinification with whole‑cluster/partial carbonic fermentation, native yeasts, matured briefly in stainless or concrete, lightly sulfured and bottled unfiltered or lightly filtered.
