Tasting Note
Mahogany color; rich nose of raisin, dried fruit, vanilla, dark chocolate and baking spice. Silky, full-bodied palate with orange zest, toasted almond, nutmeg and oak, finishing long, warm and slightly spicy.
Food Pairing
Western: dark chocolate (70%+), dried fruit, aged cheeses (Comté, aged Gouda), roasted/game meats. Asian: Peking duck, char siu (barbecue pork), hoisin‑glazed dishes, richer Thai or Indian curries.
Production Method
Hand‑selected first‑fill sherry‑seasoned European and American oak casks; casks married and bottled without chill‑filtration or added colouring; small‑batch annual releases highlight exceptional cask character.
Vineyard Info
The Macallan distillery, founded 1824 in Speyside (Craigellachie), is renowned for sherry‑seasoned oak management and meticulous cask selection; Rare Cask selects under 1% of casks for this expression.
