Tasting Note
Perfumed dark cherry and black plum with dusky violets, tobacco and crushed floral notes. Silken palate shows fine stony minerality, cranberry lift and gently grippy tannins; bright acidity and a lingering, mineral-tinged finish.

Western: roast duck, mushroom risotto, pork belly, grilled salmon, soft washed-rind cheeses. Asian: miso-glazed salmon, teriyaki salmon, wagyu yakiniku, char siu pork, shiitake dumplings.

Native yeast ferment with ~10% whole-bunch; ~14 days on skins; matured ~10 months in older French oak; bottled unfined and unfiltered. Low-intervention, site-driven approach.
