Tasting Note
Crisp, saline Chardonnay: lemon pith, pear skin and green apple with rock-salt minerality, subtle leesy richness and a savoury herbal edge. Bright acidity, medium body and a long, saline finish.

Food Pairing
Oysters and shellfish, seafood risotto, grilled white fish, roast chicken, pork belly; Asian: sashimi/sushi, miso-glazed cod, tempura, light Thai seafood dishes, Vietnamese fresh rolls.

Production Method
Hand-harvested; de-stemmed and crushed, gentle pressing; native yeast fermentation; ~10 months in old/neutral oak on lees; sterile filtered and bottle-aged before release.

Ferguson Vineyard (Woori Yallock) planted 1995; ~1.36ha, south-facing grey loam/clay soils. Farmed by Mac Forbes since 2012 with a minimal-intervention, terroir-driven approach.
